Simply reducing the dose of curing mixture is no longer sufficient\u2014the entire method of calculating and monitoring limits has changed. For traditional Czech products (Vyso\u010dina sausage, Poli\u010dan, hunter\u2019s salami, Danube sausage), the limit changes from 180 mg\/kg NaNO\u2082 to 105 mg\/kg NO\u2082.<\/p><p><strong>Second \u2013 introduction of residual amounts.<\/strong> Previously, no residual limit was defined. Newly, products must comply with the limit throughout their entire shelf life\u2014for heat-treated products, this is 45 mg\/kg NO\u2082 in the final product. This is crucial: a product that meets the standard at production may fail just before the end of its shelf life.<\/p>\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-e415ddb elementor-widget elementor-widget-text-editor\" data-id=\"e415ddb\" data-element_type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t<div><div class=\"mastabil__warn-title\"><strong>Attention \u2013 Inspections Have Tightened<\/strong><\/div><p>Regulatory authorities (CAFIA and the State Veterinary Administration) will now verify compliance directly in finished products throughout their shelf life\u2014not only during production or based on recipe records.<\/p><\/div><p><!-- \/wp:paragraph --><!-- wp:paragraph --><\/p><p><!-- \/wp:paragraph --><\/p>\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-af22a66 elementor-widget elementor-widget-heading\" data-id=\"af22a66\" data-element_type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t<h2 class=\"elementor-heading-title elementor-size-default\">Why the Conversion Is More Tricky Than It Seems<\/h2>\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-ba38188 elementor-widget elementor-widget-text-editor\" data-id=\"ba38188\" data-element_type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t<p>Limits are now expressed not for the entire salt molecule (NaNO\u2082, NaNO\u2083), but for the ion itself (NO\u2082\u207b, NO\u2083\u207b).
